Bacon-Cheese Muffins


1/2 pound bacon (10 to 12 slices)
1/3 cup bacon drippings
1 egg, beaten
3/4 cup milk
1 3/4 cups all-purpose flour
1/4 cup sugar (I use 1/3 cup)
1 tablespoon baking powder
1 cup (4 ounces) shredded cheddar cheese
1/2 cup crunchy nugget-like cereal (today I used Frosted Flakes)

Cook bacon until crisp. Drain, reserving drippings. If necessary, add oil to drippings to measure 1/3 cup. 
In small bowl, combine dripping, egg and milk; set aside.
Crumble bacon; set aside.

In large bowl, combine flour, sugar and baking powder.
Make well in center.
Add dripping-egg mixture all at once to flour mixture, stirring just until moistened. Batter should be lumpy.
Fold in bacon, cheese and cereal.
Spoon into greased or paper-lined 2 1/2-inch muffine cups, filling about 3/4 full. (I don’t like the paper liners. The muffins stick to the paper because of the melted cheese.)

Bake in preheated 400 degree oven for 15 to 20 minutes or until golden.
Remove from pan.
Cool on wire rack.

Makes 12 muffins.

These take a little bit of prep time (cooking the bacon), but they are so worth it! My family L.O.V.E.S. these!!! Enjoy!!!
